This recipe puts a twist on traditional chocolate brownies by adding a protein boost with Vegan Wondershake and a fudgy texture with yoghurt. Ingredients:
For the base:
– 120g crushed biscuits (e.g. biscoff biscuits)
– 50g dairy-free butter, melted
For the brownie:
– 100g dark chocolate, melted
– 250g dairy-free or Greek-style yoghurt
– 100g caster sugar
– 80g plain flour
– 30g dark cocoa powder
– 30g ELS Vegan Wondershake in Double Chocolate
– 120g dairy-free milk
– 100g chocolate chunks
For the topping:
– Vegan Marshmallows
Method:
1. Preheat the oven to 175 degrees C (fan oven).
2. Line and grease a 15cm baking tin.
3. Mix the melted butter with the crushed biscuits until it resembles wet sand. Press this mixture into the base of the tin and refrigerate while you prepare the brownie mixture.
4. In a bowl, combine the melted dark chocolate and sugar.
5. Add the yoghurt and mix well.
6. Mix in the dry ingredients until just combined.
7. Stir in the milk until smooth and glossy.
8. Fold in the chocolate chunks.
9. Pour the brownie mixture over the biscuit base and bake for 28-32 minutes.
10. Remove from the oven and top with the marshmallows. Return to the oven for 3-5 minutes, or use a kitchen torch to lightly toast the marshmallows.
11. Allow the brownies to cool before slicing and serving.
